Chow Mein (炒面, pronounced as chǎomiàn) is a Chinese stir-fried noodle dish usually served with vegetables and sometimes, meat (typically chicken, beef, shrimp, or pork) or tofu. It is one of the most popular Chinese dishes in the world throughout the Chinese diaspora.

It is one of the staple dishes in most Chinese restaurants abroad, especially in countries such as India, Nepal, the UK and US. There are two kinds of Chow Mein variants made popular in the market:

  • Steamed Chow Mein – This dish uses long, round egg noodles made from wheat flour mixed with egg. The noodles are either fresh or dried which are then parboiled. Due to this, the Chow Mein variant has a soft texture. The finished dish also commonly includes onions, celery, carrots, cabbage, and mung bean sprouts. Before being served, it is mixed with soy sauce for added flavour.
  • Crispy Chow Mein – This dish uses flat noodles that are stir-fried and cooked until crisp. It either has onions and celery or served ‘strained’ which means there are no vegetables in it. A thick brown sauce is also poured over the noodles before serving.

Hot pot (火锅, pronounced as huǒguō) is a hearty meal that every Chinese food lover enjoys. It is also known as soup-food or steamboat because it is prepared with a simmering pot of soup stock at the dining table.

Since it is meant to be enjoyed by many people, this dish has a wide range of ingredients added in its broth. Be that as it may, the secret to a great hotpot is in its stock. A basic hot pot stock is often made with water, salt, and spices. There are many kinds of soup flavours you can choose from such as mushroom, tomato, original, or spicy. 

The broth is brought to a simmer which is maintained at a gentle boiling temperature. Then, the raw ingredients are pre-sliced into thin sections so they can quickly cook in the stewing broth. Typical hot pot ingredients include:

Dumplings (饺子, pronounced as jiǎozi) are another Chinese dish that has been prepared and enjoyed for more than 1,800 years. It was made popular in North China before it was served in Chinese restaurants across the world. 

It is a dish made with pieces of dough (can be prepared from a variety of starch items) wrapped around a filling that is typically minced meat and chopped vegetables. Its shape is similar to Italian pasta called tortellino. 

Moreover, dumplings can be stuffed with a wide range of ingredients such as:

  • Meat (usually pork but can instead be beef or chicken)
  • Seafood (fish, oysters or shrimp)
  • Cheese

There are many ways to prepare dumplings including baking, boiling, frying, simmering, and steaming. A popular type of Chinese dumplings is the wonton which is typically boiled in a light broth or soup. It is made with a meat or shrimp filling folded in a thinner and less elastic skin wrapping.

Other types of dumplings include:

  • Rice dumplings – These are made with glutinous rice called zongzi (粽子) which are shaped like a triangle or a cone.
  • Soup dumplings – These are commonly referred to as xiaolongbao (小籠包) which are filled with hot soup and served in a small bamboo steaming basket.

Sweet and sour pork (糖醋 咕噜肉, pronounced as táng cù gū lū ròu) is one of the most famous Cantonese dishes that was developed in the Qing Dynasty. It has a distinct bright orange colour with an interesting combination of spicy, sweet, and sour flavours.

This Cantonese food is made with vinegar, preserved plums, and hawthorn candy that lends an almost scarlet colour and sweet-sour taste. It is usually prepared with spare ribs or pork loins. There are also versions of sweet and sour pork that use other proteins such as lobster balls and add the sauce to the wok before serving.

Moreover, this dish can also be made with just vegetables. It combines ingredients typically used in salads such as cucumber, tomato, bell pepper, and onion with a fusion of pineapple or pear, vinegar, and sugar to make a cold served dish. Seasonings like rice vinegar, soy sauce, and spices such as ginger and cloves can also be added to enhance the flavour of the dish.

Cantonese style roast goose (广式烧鹅, pronounced as guǎng shì shāo é) is a prime Chinese dish where a whole goose is cooked. It is prepared in a traditional cooking method of roasting in Southern China. This roasting method uses dry heat with hot air enveloping the food to evenly cook the meat.

A goose, which is in the family of waterfowls including ducks and swans, has a distinct taste with a high fat content which is packed with flavours and is also considered as the healthiest animal fat after fish fat. It is highlighted by the crisp skin and juicy meat achieved by the traditional cooking method.. The goose is typically marinated in soy sauce and rice wine.

Before the goose is roasted in a charcoal furnace, it is brushed with a glaze made with maltose syrup or honey, rice vinegar, and water. It is basted a few more times while it is roasting to give its distinct red colour and crisp skin. After it is cooked, it is served with plum sauce.
